From my experience, lots of things go wrong with SMS etc and updating it. And Symantec franky never worked properly for me.

So If I have a working LAN (ADS) and I need to add something that modifies the Schema then how do I proceed for backups etc

A. Take backups of DC

And

B. After 2 days I find a big issue in the ADS due to my software. How to revert back?

All the software has been tested in a smaller setup before. I would like to use GHOST etc.

Is there a guide on the web or in some book explaining it a more in detail (with at least more than the product names)

There are deployment guides out there for SMS/SCCM. Have you checked the Technet stuff that is out there? They have very detailed guides for administrators that will walk through deploying SCCM, updating your AD schema, etc - that might be a good place to start. The more planning you do - the more successful your SMS/SCCM deployment will turn out.
